Fluffy Pumpkin Cookies

Going over to a Thanksgiving dinner and want to impress the host and their guests? Impress them with this simple fluffy pumpkin cookie recipe.

Ingredients 

  • 1 cup pumpkin puree
  • 1 cup granulated sugar
  • ½ cup oil (canola or vegetable)
  • 1 teaspoon vanilla
  • 1 large egg
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon milk
  • 1 cup white chocolate chips

 

  • Preheat the oven to 375 degrees and line the cookie sheet with parchment paper. If you’re without paper, lightly grease the sheet so nothing sticks.
  • For the next step, it requires two bowls which will later be combined into one.
    • In the first bowl, combine the wet ingredients: pumpkin, oil, vanilla, and egg, plus the sugar.
    • Now in the second bowl, combine the flour, baking powder, cinnamon, and a pinch of salt.
    • Before combining the two bowls, dissolve the baking soda with the milk then mix everything together.

  • While mixing everything slowly, drop the chocolate chips into the batter. Then, everything is ready to be scooped onto the cooking sheet. Using an ice cream scooper can help measure out the perfect amount for one sized cookie.
  • The total time it should take in the oven is 10-12 minutes. Finally, enjoy the fluffiness of the pumpkin cookies!
